Now this is actually a recipe for pizza dough, but you add to the base to make either pizza or focaccia. I had a crack at this recipe the other day, and cooked the focaccia on the BBQ with excellent results.
Dough
Into a breadmaker add:
1 cup water
2 tablespoons olive oil
1 teaspoon salt
3 cups high grade flour
4 teaspoons Surebake yeast
Place breadmaker on ‘dough’ cycle. When the dough is made, flatten out onto a tray covered in baking paper. The dough will try to spring back into a ball, so it will take some effort to coax it into a rectangle about 1 inch thick. When flattened, brush with topping.
Topping
2 tablespoons olive oil
2 teaspoons crushed garlic
1 tablespoon freshly chopped rosemary leaves
½ cup sliced pitted black olives
1 tablespoon grated parmesan cheese
Freshly ground rock salt
Bake at about 200 degrees celcius until the top has browned and the bread is cooked. Serve with hummus or other dips.
